Chewy Ginger Molasses Cookies

Ingredients:

  • 1 1/2 Cups Butter – Softened to room temp.
  • 2 Cups Sugar
  • 1/2 Cups Molasses
  • 2 Eggs
  • 4 Cups flour
  • 4 tsp Baking soda
  • 2 tsp Cinnamon + 3 drops cinnamon oil
  • 2 tsp Ginger + 3 ginger oil
  •  1 tsp Cloves + drops clove oil
  • 1 tsp Salt

Mix together all the dry ingredients. Add the dry ingredients to the wet ingredients. Form dough into roughly 1 inch balls. Chill cookie dough balls. Cook straight from the fridge at 375 degrees for 8-10 minutes.

Peanut Butter Pie

Ingredients:

  • 1 1/2 cup whipping cream
  • 8oz cream cheese, softened
  • 1 cup sugar
  • 1 1/2 tsp sugar
  • 1 1/2 tsp vanilla
  • 1 1/2 tbs salad oil
  • 1/4 cup chopped peanuts
  • 1 cup creamy peanut butter
  • 2 tsp butter, melted
  • 3 oz milk chocolate, melted

Fill a baked pie crust with, cream cheese, peanut butter, sugar, butter, vanilla and whipped cream.

Pie topping: Thin melted chocolate with salad oil over low heat, spread quickly over filled pie. Garnish with chopped peanuts. Keep in refrigerator until served.

Taco Salad

Ingredients:

  • 1 Pkg taco seasoning
  • 1 cup cheese, grated
  • 1 onion
  • 2 tomatoes
  • 1 lb hamburger
  • 1 c corn chips
  • 1 lg head lettuce
  • 8 oz french lettuce

Fry hamburger, drain well and cool. Mix all ingredients adding corn chips and french dressing just before serving.

Zucchini Bread

  • 3 eggs beaten
  • 1 1/2 cup sugar
  • 1/4 tsp baking powder
  • 1 tsp salt
  • 3 tsp cinnamon
  • 1 cup oil
  • 2 cups grated zucchini
  • 2 cups flour
  • 2 tsp baking soda
  • 2 tsp vanilla
  • 1 cup nuts or raisins or both

Beat together eggs, oil, sugar, and grated zucchini. Add flour, baking powder, baking soda, salt, vanilla, cinnamon, and nuts and/or raisins. Place in 2 greased loaf pans and bake 1 hour at 350 degrees.

Pumpkin Bread

Ingredients:

  • 1/2 cup shortening
  • 1/2 cup white sugar
  • 3/4 cup canned pumpkin
  • 1 cup brown sugar
  • 2 eggs
  • 2 cups flour
  • 3 tsp baking powder
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/3 cup sour milk
  • 3/4 cup chopped nuts

Bake 1 hour 350 degrees in 8 by 5 loaf pan.

Teriyaki Steak

Ingredients:

  • 1/4 cup soy sauce
  • 3 tsp honey
  • 1 1/2 tsp honey
  • 3/4 cup oil
  • 2 tsp vinegar
  • 1 green onion, chopped
  • 1 1/2 tsp garlic powder
  • 1 flank steak

Mix the above ingredients and marinate steak in the refrigerator for 2 to 5 days. Turn in the mixture occasionally. Can pan fry or broil.

Minestrone

Ingredients:

  • 1/2 cup white navy beans
  • 1/2 cup leeks
  • 4 tbs butter
  • 4 shallots
  • 1 cup zucchini
  • 1 cup onions
  • 1 cup carrots
  • 2 cups canned tomato and liquid
  • 1 cup potatoes
  • 2 quarts chicken stock
  • 1 cup string beans
  • 1 cup celery
  • 3 slices bacon
  • 1/2 cup elbow macaroni
  • sweet basil
  • bay leaf
  • parsley
  • salt and pepper

Cook beans for 2 minutes. Soak one hour. Simmer in same water 1 1/2 hour. Melt butter and saute vegetables for 4 to 5 minutes. Don’t brown. Cut bacon and fry crisp. Remove from pan. Add leeks, shallots and onions and saute. Add tomatoes and bring to a boil. Add all other ingredients except macaroni and simmer 25 minutes. Cook macaroni separately and add to mixture until heated through. Top with parmesan cheese.

Corn Bread

Ingredients:

  • 1 cup flour
  • 1/2 cup sugar
  • 1/2 cup cornmeal
  • 1 egg well beaten
  • 1 cup milk
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1 tbs melted butter

Combine and sift dry ingredients. Add the other ingredients and bake in greased eight inch pan 450 degrees for 20 min.

Five Pounds of Fudge

Ingredients:

  • 4 1/2 cups sugar
  • 1 can (13 oz) evaporated milk
  • 9 oz bittersweet chocolate chips
  • 9 oz semisweet chocolate chips
  • 1/2 butter
  • 7 oz jar marshmallow cream
  • 2 cups chopped nuts, optional
  • 1 tbs vanilla

Bring sugar and milk to boil and boil 6 minutes. Remove from heat and add rest of ingredients. Beat until smooth. When it begins to thicken pour into 9 x 13 buttered pan. Cool and store in refrigerator.

Super Oatmeal Cookies

Ingredients:

  • 2 cups all-purpose flour
  • 6 eggs, beaten
  • 1 1/2 tsp salt
  • 1/2 cup
  • 1 1/2 tsp soda
  • 2 cups vegetable shortening
  • 4 tsp vanilla
  • 1 cup peanut butter
  • 4 tsp cinnamon
  • 2 cup raisins
  • 4 cup sugar
  • 1 cup chopped walnuts
  • 12 oz pkg milk chocolate chips
  • 7 cups quick rolled oats

Sift or stir together flour, salt, soda and cinnamon. In large mixing bowl, cream shortening and peanut butter until fluffy. Add sugar gradually. Add eggs, milk and vanilla. Beat well. Add flour mixture. Stir in raisins, chocolate chips, walnuts and oats. Mix thoroughly. Drop by tablespoon onto foil or parchment paper line cookie sheet. Cookies will spread about 3 1/2 inches. A regular size cookie sheet will hold 1 dozen. Bake at 375 degrees for 10 to 15 minutes. Leave on cookie sheet for 2 minutes after removing from oven.
